Ingredients

    Ingredients:
    Olive Oil, 1 tbsp (remove)
    *Homemade Turkey Stock, 5 cup (remove)
    *Arrowhead Mills Organic Red Lentils, 2 cup (remove)
    *Contadina Crushed Tomato, 24 oz (remove)
    Onions, raw, 2 small (remove)
    Louis Rich Turkey Bacon (1 slice), 3 serving (remove)
    Water, tap, 3 cup (8 fl oz) (remove)
    Turmeric, ground, 1 tsp (remove)
    Salt, 2 tsp (remove)
    *Potato, raw, 3.75 cup diced (remove)
    Curry powder, 2 tsp (remove)
    *Lemon Juice, .5 lemon yields (remove)
    Garlic, 2 clove (remove)

Directions

In a stock pan add olive oil and heat. Add onion, garlic and turkey bacon and turmeric and sautee. Add tomato and lentils and stock and cook for about 15 minutes. Add potatoes and water and rest of ingredients. You may want to add more salt if you like or more curry powder as well. Lentils cook fast and if you like use a hand blender to smoothen a bit the consistency of the soup. I blended about half the soup and then added the rest so as to have a rustic feel. Serve with croutons .
