Pear Zucchini Bread

Ingredients

    2 C. all-purpose flour
    1 C. whole wheat flour
    3/4 C sugar
    3/4 C. packed brown sugar
    2 tsp pumpkin pie spice
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt
    3 large eggs
    3/4 C. vegetable oil
    3 tsp vanilla extract
    2 C. finely chopped peeled ripe pears
    1 C. shredded zucchini

Directions

In a large bowl, combine the first eight ingredients. In another bowl, beat eggs, oil, and vanilla. Add the pears and zucchini. Stir into dry ingredients just until moistened. Pour into 2 greased 9x5x3-in loaf pans. Bake at 350 for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Makes 2 loafs, 10 slices each loaf
