Number of Servings: 4

Ingredients

    1 pork tenderloin (about 1 pound), trimmed of any visible fat
    1 bottle (12 oz.) dark beer (a porter works great!)
    2 tbsp reduced sodium soy sauce
    1 tbsp honey
    1.5 ounces fresh ginger root, peeled and sliced
    fresh ground black pepper

Directions

Whisk together the beer, soy sauce and honey. Put the tenderloin in a large ziploc bag or baking dish and cover with the marinade. Add the ginger. Seal and let sit for at least 1 hour (or up to overnight).

Prepare your grill - I use a propane grill. Lay the tenderloin across the grill and coat the top generously with the freshly cracked black pepper. Let cook for 10 minutes, turn and baste with the remaining marinade. Let cook for another 10 minutes or until done. Remove from grill and let sit for 5 minutes before slicing and serving. Makes approximately 4 4-ounce servings.
