Number of Servings: 32

Ingredients

    water, cold, 1 1/4 cup
    water, hot, 1 cup
    olive oil, 2 T
    almond meal flour, 1 1/4 cups
    unprocessed wheat bran, toasted, 1 3/4 cups
    vital wheat gluten, 1 1/2 cups
    soy protein powder, 1 cup
    whole wheat flour, 1/4 cup
    salt to taste, I used 3.4 tsp.
    olive oil to knead.

Directions

Combine hot and cold water... add yeast, wait 5 minutes. Add olive oil Mix up all the dry ingredients in one bowl... wet in the other. Mix well and then knead about 5 minutes. Shape into two loaves. Place in greased loaf pans or freeform. Let rise in oven that has been preheated to 200 and then turned off. Wait 60-75 minutes. Should double/triple in bulk. Then turn oven to 350 and bake about 40 minutes.

Serving Size: 2 loaves... 16 slices each, 32 slices total
