Mercimik Corbasi (Turkish Lentil Soup)

Ingredients

    Lentils, 1.5 cup (remove)
    Onions, raw, 1 cup, chopped
    Garlic, 2 cloves
    Carrots, raw, 3 medium
    Potato, raw, 3 small
    Tomato Paste, 200 grams
    Lemon juice, 1 tbsp
    Roughly 500 mL water

Directions

Serving Size: Makes 5 one-cup servings


Saute onions and garlic until translucent
Add chopped carrot and potato, cook 1-3 minutes
Add lentils and tomato paste, cook briefly
Add water, bring to a simmer for 30 minutes
Blend with hand blender
Add lemon juice, blend again

Garnish with peppermint leaves fried in oil, if you choose
