Introduction

Number of Servings: 12

Ingredients

    6 cups sliced zucchini
    3 cups slice summer squash
    3 cups onions
    3 tsp garlic
    2 large red ripe tomatoes
    1/8 cup olive oil
    1 box of 99% fat free chicken stock
    1 box of beef stock
    1T shredded cheese
    1 tsp beef flavoring
    1 tsp mushroom flavoring

Directions

heat olive oil on low, add onions and garlic, on low for 25 minutes. Then add rest of vegetables and stock and raise heat to medium. Simmer for another 25 minutes. With a blender either immersion or regular, process until smooth.
put 1 T shredded cheese before serving
