Strip Steak with peppers, onions and mushrooms

Ingredients

    Green Peppers (bell peppers), 2 cup, strips (remove)
    *Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4" (remove)
    Beef, round steak, 1 lb (remove)
    Mushrooms, fresh, 2 cup, pieces or slices (remove)
    Trader Joe's Jumbo Pitted Greek Kalamata Olives (5 olives = 1 serving), 4 serving (remove)
    365 Organic Extra Virgin Olive Oil, 3 tbsp (remove)

Directions

Cut peppers into strips. Cut mushrooms into pieces. Heat 1 tablespoon of oil in a large skillet. Cook veggiesover med. high heat 5 minutes or until edges start to brown. Cut steak into smail strips. Remove fat. Season with salt. Put cooked veggies into a bowl and set aside. Put 2 tablespoons oil in same pan. Heat to med. high. Cook meat until brown, but not burnt. About 5 minutes. (Leave some pink in the middle) Cut up olives into slices. Return veggies to pan with meat. Add olives. Sprinkle with red chili pepper to taste. Toss to heat. Serve plain or over rice or linguini.
