Baked Falafal

Number of Servings: 6

Ingredients

    1 can chickpeas
    1 small onion, chopped
    2-3 cloves garlic
    1/2 c parsley
    3 - 5 TBSP flour (chickpea good GF choice)
    2 tsp olive oil
    Seasonings: salt, pepper, cummin, paprika, corriander

Directions

Pre-heat oven 400F

Add chickpeas, garlic, olive oil, parsley to food processor. Process until smooth.

Transfer mixture to a bowl. Add remaining ingredients. Start with 3 TBSP flour, adding additional as necessary to form dough that can be handled.

Spray baking sheet with cooking spray.

Scoop dough by spoon. Roll into ball. Flatten slightly on cookie sheet.

Bake 16-18 minutes. Underside should be golden brown. Spray falafal patties and cookie sheet again with cooking spray. Flip patties. Bake additional 10 + minutes until underside is golden brown.

Serve immediately.

Patties are a little dry. Serve with your favorite sauce or dress with lettuce, onion, and juice tomato slices - with or without a pita.
