Vegetarian Mac & Cheese

Introduction

Soy based, vegetarian/vegan no lactose, no cholesterol, no smelly animal stuff! Pretty easy and yummie too! Soy based, vegetarian/vegan no lactose, no cholesterol, no smelly animal stuff! Pretty easy and yummie too!
Number of Servings: 4

Ingredients

    1 bag Cheddar Veggie Shreds
    8 oz Elbow macaroni, mini ziti or shells
    1 small onion, chopped
    2 tsp Soy Margarine [Earth Balance]
    1.5 Cups Plain Unsweetened Soymilk [Silk]
    A large pot

Directions

Bring some water to boil in a large pot and add Pasta. Meanwhile in a small pan sautee the onion in the margarine until tender. Add the cheese and the soymilk. Cook on low heat until the cheese is melted, stirring often. Drain pasta when it is done and pour the cheese sauce over it, then mix well. Enjoy!
