Cheater Seitan

Introduction

I call this Cheater Seitan because of how easy it is. This is much easier to put together than its wheat-flour counterpart. I call this Cheater Seitan because of how easy it is. This is much easier to put together than its wheat-flour counterpart.
Number of Servings: 6

Ingredients

    1 c. vital wheat gluten
    1 t. garlic powder
    1/2 t. ground ginger
    1/4 t. liquid smoke
    3/4 c. water

    8 cups vegetable broth
    2 bay leaves
    1/4 yellow onion

Directions

Combine liquid ingredients in a small bowl or measuring cup. Combine dry ingredients in a large mixing bowl. Add liquid ingredients to dry ingredients all at once. Working quickly, stir until a soft dough forms. Knead dough for a few minutes, then let stand.

Bring vegetable broth to a simmer in a very large pot. Add bay leaves and onion. Cut seitan loaf into four pieces. Stretch each piece until flat and thin. Submerge in simmering broth. Cook for one hour, stirring and turning pieces over occasionally to ensure even cooking.

Let cool. Slice into cubes or strips. Can be refrigerated for several days. For longer storage, slice and freeze in an air-tight container.
