Introduction

My daughter made this for me. It uses coconut oil. I detest coconut, however in this recipe it's delicious. Great hot or cold. Number of Servings: 6

Ingredients

    1 cup quinoa
    2 cups water
    1-2 T cocunt oil
    1 mango, sliced
    1 bunbh cilantro
    1/3 cup peanuts
    salt & Pepper
    1 small red onion

Directions

Cook quinoa according to instructions.Let cool
Melt coconut oil over med-low heat. Add chopped onion and cook till it's translucent
Add quinoa to onion mix. stir
Add peanuts, cilantro,salt and pepper, and mango
toss and serve.
