Apples, fresh, 1 small-peeled, cored & pureed (or grated)

Directions

Heat oil in a large saucepan over medium low heat & add onions. Saute onions until golden brown & caramelized (about 30 minutes). Turn up heat to high, add the chicken & brown.

Add carrots & water, bring to a boil. Skim off any foam off the surface. Lower heat to medium, add potatoes, pureed apple, & curry. Simmer until you can pass a fork through the carrots/potatoes & meat is tender. ( about 20 mins).

For the roux, melt the butter over medium low heat. Add flour & curry powder, stirring until a thick paste. Add cayenne pepper & black pepper. Stir. Add ketchup & worcestershire sauce mix well. Continue to cook until the paste starts crumbling. Remove from heat & set aside until meat & veggies are ready.

Ladle about 2 cups of liquid into roux & whisk until smooth. Pour this mixture back into the other pot & gently stir until thickened.
