1/3 cup of splenda (15 tsp) 3 tbsp cornstarch 1/4 tsp salt 2 1/2 cups skim milk 1 1/2 tsp vanilla extract
in saucepan combine splenda, cornstarch and salt. grandually add in milk. cook over medium heat until thickened, continue to cook for 2-3 minutes more. remove from heat and stir in vanilla extract. cool for about 10 minutes stirring oftern pour into 4 desert dishes and chill. serve with fruit or low fat cool whip or both. make a great parfait with low calories. layer in parfait glass alternating pudding and fruit, top with a dallop of cool whip.
