1 egg, beaten
1/4 c. plain bread crumbs
2 boneless, skinless chicken breasts pounded to 1/2 inch thickness (calculations used 1 pound)
2 Tbsp vegetable oil
1 c. ready to use chicken broth
1/4 lb mushrooms sliced or cut in half
2 oz Colby cheese or jack or Colby jack, shredded
Ramen noodles-broken up
In same skillet, combine, broth, mushrooms and broken up noodles. Cook four minutes over medium heat until noodles are tender. Reduce heat to medium low and return chicken to skillet. Sprinkle the top with cheese. Cover and cook for or five minutes until cheese is melted.
