Vegetarian Sloppy Joes

Craving that meaty bbq bite? This is the meal for you. The lentils give this the consistancy of meat and the homemade bbq sauce is really good! Not too sweet, not too much of a bite. Number of Servings: 6

Ingredients

    2 cups cooked lentils
    1 tbsp Dijon Mustard
    1 tbsp packed brown sugar
    1 tbsp balsamic vinegar
    1/2 cup vegetable stock
    1/2 cup ketchup
    1 tbsp oregano
    3 cloves garlic minced well
    2 stalks celery chopped fine
    1/2 cup chopped onion (1 whole medium)
    1 tbsp olive oil

Directions

You need 2 cups of cooked lentils.

In a large pot sweat onion, olive oil and celery over medium high heat. Once the onion and celery has becomed soft, usually 5-8 minutes, add the garlic.

Stir well for aprox. 2 minutes. Once the garlic becomes fragrent, add all remaining ingredients. Stir well.

Once mixture starts to boil, turn the heat down and allow it to reduce a bit and tighten up. Total cook time is about 25-35 min.

Serve immediately, make ahead, or freeze.
