3 pounds pork 6 garlic cloves, crushed 1/2 cup onions 3 T. vinegar 1/4 cup soy sauce 1/4 tsp. salt 1/2 tsp. black pepper 2 T.cooking oil 1 10g pack Mama Sita's Achote powder AKA Achuette Annatto Powder 2 1/2 cups hot water
Cube pork. Marinate in garlic, onion, vinegar, black pepper, and soy sauce for at least one hour. Disolve Mama Sita's Achuete ( Annatto Powder) also AKA Achote in Chamorro cooking, in 1/2cup hot water. Mix with the other 2 cups of hot water. Add oil to skillet, heat and add pork along with the marinade.Bring to a boil. Add the achote water. Reduce heat and simmer Slowly stir in cream of rice. Reduce heat and simmer 50 minutes. Serve over steamed rice.
