Number of Servings: 6

Ingredients

    2 lbs of Asparagus
    Approx. 1 cup chopped onions
    2-3 garlic cloves (optional)
    1 tsp flour (any kind)
    1 tbsp Canola oil or olive oil
    Approx 1/4 tsp salt and pepper

Directions

1. Wash asparagus and snip off the hard stems.
2. Separate the tips and save them to be added later.
3. Chop onions and garlic cloves, saute in a tsp of oil until transparent.
4. Boil asparagus in approx 2-3 cups of water and let it cool.
5. Puree onions and asparagus together using a blender
6. In a big saucepan, add a tsp of oil, sautee the flour until golden brown, lower the heat and add the pureed mixture.
7. Add evaporated milk and let the soup come to a boil.
8. Now add asparagus tips and let it stay for a few minutes.
9. Serve hot and enjoy with your favorite bread.


Serving Size: makes 6 1-cup servings (approx.)
