Soup: Corn-Broccoli-Cauliflower Soup

Number of Servings: 6

Ingredients

    1 cup fresh corn
    1 cup broccoli florets
    1 cup cauliflower florets
    1 cup chopped onion
    3 cloves garlic
    1 cup soy milk
    1 tsp salt
    1 tsp black pepper
    2 Tbsp butter
    1 Tbsp all purpose flour

Directions

1. Boil corn, cauliflower, broccoli in 2 cups water
2. Saute onion and garlic in a tbsp of butter
3. Blend the veges (boiled and sauteed) in a blender for about 5 mts
4. Heat a tbsp of butter and roast the flour to golden brown
5. Add the blended vegetable puree, salt, pepper, and soy milk and bring to a boil
6. Serve hot with your favorite bread
7. Enjoy!
