Mom's Shephard's Pie

Number of Servings: 8

Ingredients

    1 lb lean (93%) ground beef
    1 14.75 oz can creamed corn
    Mashed potatos:
    5 medium sized potatos
    1/2 cup 1% milk
    2 tablespoons light margarine
    1/2 tablespoon salt
    1/2 tablespoon black pepper

Directions

Preheat oven to 350.

Cook ground beef on medium heat (drain thouroughly once complete) and at the same time prepare mashed potatos:
Peel, wash and cut potato and boil in enough water to cover the potatos until soft; drain. Mash with masher or use blender with milk, margarine, salt and pepper until smooth.

In 13 x 9 casserole dish: pour cooked beef and creamed corn. Top with mashed potato covering the meat and corn completely. Bake at 350 for about 45 minutes. Let cool for a bout 5 minutes and enjoy.

Make about 8 - 1.5 cup servings
