Creamy Garlic Mashed Cauliflower

This is a great substitute for the normal mashed potatoes. I think its even better at times. Sometimes I add a little more buttermilk to make it more creamier depending on what I am pairing it with.You can opt to add another 2 tsp of oil after its done as a garnish along with the fresh chives but realize that will raise the nutritional info.
The serving size varies depending on how big your cauliflower is and if you can manage to scope it all out. I dont have a food processor so I use my blender so sometimes I end up with 1/2 cup of serving other times I have gotten 3/4 cup but with a bigger cauliflower head. Ingredients

1 cauliflower head
4 cloves garlic, peeled
1/3 cup nonfat buttermilk (see Tip)
2 tsp grape-seed oil (you can use olive oil but that might change the nutrition)
1 tsp butter
1/2 tsp salt
about 1/4 tsp of Freshly ground pepper or to taste
(optional) Snipped fresh chives for garnish
Directions
1. Cut cauliflower into smaller florets and peel the garlic.
2. Place cauliflower florets and garlic in a steamer basket over boiling water, cover and steam until very tender, 12 to 15 minutes.
3. Place the cooked cauliflower and garlic in a blender or food processor. Add remaining ingredients (buttermilk, oil, butter, salt and pepper); blend until smooth and creamy.
4. Transfer to a serving bowl.
OPTION - You can garnish with chives.
TIP - I always forget to buy buttermilk so if you don't have buttermilk you can make it by mixing 1 tablespoon lemon juice or vinegar to 1 cup milk. Let stand for 5-10 minutes at room temperature. Measure what you need to use (1/3 cup) and discard the remaining or use in another recipe.
