LOW CARB CHICKEN CORDON BLEU

Introduction

My low carb spin on a classic. My low carb spin on a classic.
Number of Servings: 4

Ingredients

    4 chicken breasts, boneless skinless
    4 wedges laughing cow light creamy swiss (may sub cream cheese)
    4-6 slices lean ham
    1/4c parmesan (I use fresh and grate it in a food processor)
    1/4c almond meal (I make my own by adding sliced almonds to the food processor after grating the parm)

    *You could also use all parmesan or all almond meal if you only have one of them. Or, feel free to omit - I'm sure it's still tasty!

Directions

Preheat oven to 375 and coat a baking dish with non-stick spray.

1. Pound each chicken breast thin (about 1/4" thick) and season with salt & pepper to taste
2. Roll each cheese wedge inside a piece or two of ham.
3. Wrap the chicken around the ham roll-up.
4. Roll the outside of the chicken in your parmesan-almond crumb mixture.
5. Bake @ 375 degrees for about 35-45 minutes until cooked through. (If you want to brown the crumbs a bit, use the broiler for the last 3 minutes.)
6. Enjoy!

**Note: If making your own almond meal/flour be careful not to over-process or it will turn into almond butter.

While this may sound like a lot of work it's actually pretty easy! The trick is just to have all of your ingredients prepared, the oven preheated and your baking dish ready before you being the roll-up process.
