Ingredients
-
Left over turkey, about 4 cups mixed light and dark meat, skin removed.
Turkey bones, as many as available or will fit in a full size crock pot.
Fresh carrots, 1-2 cups chopped
1 whole onion, diced
1-2 cups fresh, chopped celery
Salt about 3 tbl or to taste
1 1/2 cups uncooked egg noodles or 1 cup rice
8 cups of water
Directions
Place the meat and bones in a crock pot with about 3 cups of water and cook on low. After 24 hours add 3 more cups of water. In another 24 hours pull the bones and meat out, add the fresh vegetables and about 2 cups of water. Remove any turkey meat from the bones and shred all the meat, return meat to the crock pot and continue cooking on low. In 8 to 10 hours add the noodles (rice can be substituted). 1 hour later your soup (stew) will be ready. Salt can be added to taste if it's needed.
