North Dakota Knoephla Soup

Introduction

Hearty and warm dumpling soup Hearty and warm dumpling soup
Number of Servings: 8

Ingredients

    Knoephla: 3 C Flour 1.24 Tsp Baking powder, 1 Tsp Salt

    Soup:
    4 cups water
    2 cups light chicken broth
    2 Tsp mrs dash garlic herb seasoning
    1 Tbsp black pepper
    2 Tbsp garlic/salt grinder
    1.25 cup chopped carrots
    2 cups diced yellow potatoes
    3 small white onions, diced or sliced

Directions

Mix up the flour, salt and baking powder, and slowly add the 1 cup of milk and make a stiff batter. Roll into 1/2 inch ropes, and cut into bite size chunks.

Mix up all the other ingredients except remaining 1 cup of milk and let simmer for 20 minutes.

Add the knoephla dumplings and remaining milk and simmer for about 30-40 minutes until dumplings are cooked.

Enjoy!!

  • OMG!! I was delighted to see this! Being from ND (but now live in NC). I make this for friends all the time and they LOVE IT!!! Your version is a little healthier than mine. I add crm of chckn soup to make it creamier but skip milk. I make this after Thanksgiving with extra turkey meat!!! - 3/31/11
