BBQ Roasted Salmon

Introduction

Oven roasted salmon steaks are rubbed with a unique blend of sweet ( brown sugar & cinnamon), a touch spicy (chili powder & cumin) and tart (lemon zest). Even those skeptical of seafood will love this taste! Served with Jasmine brown rice if desired. Number of Servings: 4

Ingredients

    4 (6-oz) salmon filets
    1/4 cup pineapple juice
    2 T. lemon juice
    2 T. brown sugar
    4 t. chili powder
    2 t. grated lemon find
    3/4 t. ground cumin
    1/2 t. salt
    1/4 t. ground cinnamon
    Cooking spray
    Lemon slices (optional)

Directions

Combine pineapple juice, lemon juice and salmon and marinate in fridge for 1 hour, covered. Discard marinade. Combine sugar & next 5 ingredients (sugar through cinnamon) in a bowl. Rub over fish, place in 11X7-inch pan coated with cooking spray. Bake at 400 degrees for 12 minutes or 'til fish flakes easily. Serve with lemon slices if desired.
