Healthier Pan Fried Chicken

Introduction

I converted an old family recipe & made it healthier by using some wheat flour & coconut oil. I used low sodium salt to make mine less salty. You can use more. I like the taste of the buttermilk, but you can eliminate it if you want & save some calories. I converted an old family recipe & made it healthier by using some wheat flour & coconut oil. Number of Servings: 6

Ingredients

    1/2 Cup Buttermilk
    1/4 Cup All Purpose Flour
    1/4 Cup 100% Whole Wheat Flour
    1 tsp. Paprika
    1/4 tsp. Salt
    1/8 tsp. Pepper
    24 oz. Chicken Breast
    1/4 Cup Coconut Oil


Directions

1. If you are using buttermilk from a powder, mix it up in a bowl & put it a side.

2. In a big bowl, mix up all of the dry ingredients.

3. Cut chicken into strips.

4. Put Coconut Oil in a 12-inch skillet & over medium heat. After melting, oil should be 1/8 inch deep in bottom of pan.

5. Dip chicken in buttermilk. Then, coat the chicken pieces with the flour mixture. Place chicken pieces into the hot pan.

6. Cook the pieces until they are a golden brown color on all sides, approximately 10 minutes.

7. Reduce the pan heat to a low simmer. Cover the pan tightly. Allow the chicken to simmer for 20 minutes. Turning the pieces a couple of times.

8. After 20 minutes, remove the cover & continue to simmer the chicken pieces for another 10 minutes. Turning the chicken 2 times. Allowing the chicken to crisp.

9. Serve & Enjoy!

PS. If you want to use whole chicken breasts instead of strips, simmer the chicken for 35 minutes covered instead of 20 minutes.
