Creamy Carrot Soup (Dairy Free!)

Introduction

This is a modified version of a recipe from the popular "Pioneer Girl" blog. Originally, she recommended use of 1.5 cups of half and half. However, to save fat and make it dairy-free, I have substituted it with rice milk to give it creaminess. Enjoy! This is a modified version of a recipe from the popular "Pioneer Girl" blog. Ingredients

    8 whole Large Carrots, Peeled And Sliced
    1- cup Low Sodium Chicken Broth
    2 cloves Garlic, Pressed
    1 whole Lemon Zested
    1- cup rice milk
    Lemon Juice To Taste
    teaspoons Nutmeg
    teaspoons Kosher Salt (or Regular Salt To Taste)
    Ground Black Pepper To Taste

Directions

After carrots have been peeled, slice them into 1-inch pieces.
Press garlic. Add carrots, garlic, and chicken broth to pot. Zest lemon and add zest to the pot. Turn burner on low, cover, and simmer for 20 minutes. Once carrots are tender, either puree in the pot with an immersion blender or transfer pot contents to a traditional blender and puree before pouring back into the pot. Then add juice from half of the lemon and the pre-measured rice milk. Stir thoroughly. Add nutmeg, basil, and salt and pepper to taste and stir thoroughly again.
Simmer on low for 2-3 minutes, do not allow to boil.
Serve!
