Ingredients

    Note: Use Dried Thyme leaves and salt and pepper to taste, the tabasco is optional.
    Tastes great with soup croutons are a piece of tuscan bread (not included in the above calorie count).

Directions

Make a roux in a 2 quart saucepan by melting the butter over medium heat. Add the flour slowly and cook stirring constantly for three minutes. Remove the saucepan and set aside.
In a 4.5 quart dutch oven, heat the oil over medium heat until hot but not smoking.
Finely chop the onion, celery, carrots and mushrooms and add to the oil and cook while stirring for about 5 minutes or until the onions are softned.
Cut the potatoes into half in cubes and add to the mixture in the dutch oven. Stir in the vegetable broth, chopped clams with their liquid, thyme, basil and salt and pepper to taste.
Bring to simmer over medium heat until the potatoes are cooked through (typically 5 minutes or more).
Add the half and half and increase the heat to medium high until the soup comes to a low boil.
Add the roux slowly whisking constantly until will blended.
Reduce heat and simmer for 10 minutes stirring occasionally.
Serve and enjoy !!

Serving Size: Makes approximately 4 3 cup servings or 8 1.5 cup servings.
