David's Favorite Udon

Number of Servings: 4

Ingredients

    1 tbsp peanut oil
    6 cloves garlic, sliced thinly
    3 tbsp ginger root, either fresh grated or use the tube kind
    1 tsp sambal oleek (chili paste)
    1 can whole peeled straw mushrooms, drained
    21.75 oz package of Jumbo Udon, seasoning packages discarded
    3 tbsp stir fry sauce
    2 tsp sesame oil
    1/3 cup scallions (optional)
    3 tbsp toasted sesame seed

Directions

Empty udon from packages into strainer and rinse with warm water until they separate.

Heat peanut oil in a large skillet over medium heat. Add garlic and ginger and saute until tender but not brown; abotu 5 minutes. Stir in sambal oleek. Add mushrooms and cook until warmed through; about 2 minutes. Add in the udon, and cook, stirring until warmed through, 2 minutes, adding sesame oil as the udon begin to stick. Stir in the stir fry sauce. Sprinkle with scallions and sesame seed.

Makes 4 (1 1/2 cup) servings.
