4 Medium Zucchini Onion Garlic Protein Cumbles Tomato Dried Basil Bread Crumbs Olive Oil Part Skim Mozzerella
Slice Zucchini in half lengthwise. Boil in large pot for appx 6-7 minnutes until slightly tender. Drain and rinse with cold water. scoop out center, and save. Brown Protein crumble in olive oil with onion and garlic. Add tomato, scooped out zucchini, basil, bread crumb and salt & pepper to taste. Fill Zucchini halves and top with mozzerella. Place on baking sheet and bake for 20-25 minutes at 350.
