Arugula Salad with Mushrooms and Macadamia Nuts

Introduction

This is such a healthy refreshing salad. The nuts are what make it extra special. Only prep is to cut pepper and quarter mushrooms. Easy and fast. This is such a healthy refreshing salad. The nuts are what make it extra special. Only prep is to cut pepper and quarter mushrooms. Easy and fast.
Number of Servings: 4

Ingredients

    1 large red bell pepper cut into thin strips
    8 oz small portabella mushrooms, quartered
    1 4-5 oz bag of baby arugula
    1 can mandarin oranges, drained
    3 oz unsalted macadamia nuts (option to cut in smaller pieces)

Directions

Put all ingredients in bowl and toss. I usually leave the nuts out until I have put salads into serving dishes and then sprinkle on top. That was everyone gets their fair share.

I use Annie's natural goddess dressing, but I leave dressing choice up to you. Dressing is not included in calculations.

Serving Size: 4 1.5 cup salads
