Tofu Frittatta

Ingredients

    Mushrooms, fresh, 4 medium
    Carrots, raw, 2 medium
    Onions, raw, 1 small
    Leeks, 1 leek
    Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.)
    Nutritional Yeast, 2 tbsp
    Dijon Mustard, 3 tsp

Directions

Saute onions until soft, 10 minutes
Add mushrooms, carrots, leeks, 5 minutes
Add potatoes, cook 5 minutes

Blend tofu, nutritional yeast, mustard, with salt and pepper as desired

Put vegetables into lightly greased pan, pour tofu mixture on top

Bake covered for 30 minutes at 375 F, then uncovered for 10 minutes mroe

Serving Size: Four one-cup servings
