Introduction

A twist on the classic southern dish! A twist on the classic southern dish!
Number of Servings: 3

Ingredients

    2 tsp. Extra Virgin Olive Oil
    2 Tbs. Chopped shallots
    2 links Trader Joe's Chicken Andouille Sausage, sliced into thick coins
    1 1/2 Cup Prepared Quinoa
    1 Cup frozen spinach, thawed
    1 1/2 Cup cooked Black-Eyed-Peas (or cowpeas)

Directions

Heat 10" skillet. Add EVOO. Sauté shallots until they start to soften. Stir in sausage coins and heat through until they glisten.

Stir in prepared black-eyed-peas and spinach. Add salt and pepper if desired. Heat through. Lightly stir in the quinoa. Heat through. Check seasoning levels.

Serve with Red Hot or your favorite Louisiana style hot sauce!
