Introduction

Ingredients

    Pam cooking spray - 1 spray
    1 tbsp chopped onion
    6 cherry tomatoes halved
    1 cup baby spinach
    3 sliced mushrooms (medium)
    2 egg whites
    2 tbsp 1% milk
    whole wheat pita (wegman's brand)
    1 tbsp wholly guacamole Pico de gallo style
    1 tbsp shredded sharp cheddar cheese

Directions

Spray frying pan and saute veggies for a few minutes. Whisk together eggs and milk and add to the veggies and scramble. Add to Pita and top with guac and cheddar cheese.
