Introduction

Ingredients

    1 cup Brown Sugar
    1 cup White Sugar
    1/2 cup Canola Oil
    1/2 cup unsweetened Applesauce
    3 Eggs
    2 tsp. Vanilla
    1 cup Whole Wheat Flour
    2 cups White Flour
    1 tsp. Salt
    2 Tbsp. Baking Powder
    1 tsp. Baking Soda
    2 tsp. Cinnamon
    1 tsp. Nutmeg
    1 cup chopped Pecans (or walnuts)
    1 cup Raisins (or Craisins)
    2 1/2 cups diced Green Tomatoes
    Coconut is optional

Directions

Preheat oven to 350 F. In mixing bowl, beat sugar, oil, applesauce, eggs, and vanilla until smooth. Then add dry ingredients.
Fold in tomatoes, raisins, nuts.

Pour into 3 foil pans - smaller than regular bread pan.
Bake about 75 minutes until toothpick comes out clean.
Cool about 15 min., remove from pan and cool on rack.

Each pan makes about 39 slices.

Serving Size: 3 foil bread pans (Not regular bread pans)
