Baked Herb Red Potatoes

Introduction

This is one of my family's favorite ways to have red potatoes. I love the fact they are so quick and always turn out perfectly done on the inside and always crispy on the out. Even pretty good the next day warmed up, if you have any left. This is one of my family's favorite ways to have red potatoes. Number of Servings: 4

Ingredients

    4 medium red potatoes
    1 tablespoon extra-virgin oilive oil
    2 teaspoons dried italian seasoning
    1/2 teaspoon kosher salt
    1 teaspoon smoked paprika

Directions

Preheat oven to 450 degrees F. Cut potatoes into fourths lengthwise. Then cut into 1 inch bites. Place on baking sheet and drizzle with the olive oil, then sprinkle remaining ingredients on top of potatoes. Toss to combine and spread out evenly on baking sheet.
Bake for 20 minutes, stir half way through and enjoy.

Serving Size: makes about 4 3/4-cup servings, depending on size of potatoes.
