Introduction

Easy to make and a great source of protein & fiber, this is a versatile dish that can be served plain with tortilla chips, on top of a bed of fresh salad greens, or wrapped in a tortilla with some grilled chicken, seasoned ground turkey or beef. Ingredients

    1 can black beans, rinsed and drained
    1 can Green Giant Mexicorn, drained
    1 can Rotel Diced Tomatoes & Green Chilies, drained
    1 cup (loose) fresh cilantro
    1 lime
    Salt, pepper & cumin to taste

Directions

Mix together canned ingredients. Using kitchen shears, snip cilantro into small pieces (it will be much less than a cup, once it's chopped). Add cilantro and the juice of 1 lime to the bean mixture. Season to taste with salt, pepper and cumin. For best flavor, allow to sit in the refrigerator for at least an hour. Enjoy!
