Introduction

This is a great light soup for cool weather. If you have leftovers, you can bake it in a pie shell for another hearty (but less light) winter dinner! YUM! This is a great light soup for cool weather. Ingredients

    When I measured it out, I used 1.5 pounds of turkey - cooked, 4 pounds, 4 oz of potatoes, and about .5 oz of onion.

Directions

This recipe makes about 5 pounds, 2 oz of finished product - not counting the broth.

Dice potatoes (skin on or off, your preference), mince onions, brown 1 to 1.5 pounds of ground turkey and drain. Combine all ingredients in a pot and cover with water. Add salt to taste. If you don't add enough you can add more at the end - it won't change the recipe. Bring to a rolling boil for a few minutes, then take down to a simmer. Soup is ready when potatoes are tender. Cheap, easy, low-fat, low-cal and FILLING!
