Ingredients

    Spinach:
    cooking spray
    3 eggs
    1/2 cup all-purpose flour
    1 pound small-curd cottage cheese
    4 (10 oz) boxes frozen chopped spinach. Thawed and squeezed
    1/2 teaspoon salt freshly ground pepper

    Eggs:
    8 eggs
    1 cup shredded Parmesan or Swiss
    4 English muffins split and toasted
    1/2 cup slivered red bell pepper, optional
    1/2 cup slivered onion, optional

Directions

spinach thawed and squeezed dry
1. Preheat oven to 350 F
2. Coat a 13 by 9 baking dish with cooking spray
3. To prepare spinach, combined 3 eggs, flour and cottage cheese; stir well. (this can be done up to 2 days ahead). Press mixture into prepared dish. Make 8 indentations with the back of a spoon where the eggs will be placed. Bake 25 minutes.
4.Remove from oven, and use a spoon, press the indentations more deeply, Bread an egg into each indentation. Bake 15 minutes or until whites are set. Sprinkle with cheese. Return to the oven and bake 1 minute.
5. Place 1 egg and spinach nest on English muffin half. Garnish with silvered red peppers and onion. If desired.
