Flavorful and healthy recipe, the oatmeal and milk makes it moist (and high in fiber!) despite being low-fat. I sometimes sprinkle just a bit of low-fat shredded cheddar on top of the salsa in the last ten minutes. This recipe is from Joy Bauer's Food Cures book. Ingredients

•1 pounds turkey, ground, lean
•1 cup(s) oatmeal, instant
•3/4 cup(s) milk, fat-free
•2 egg white(s)
•1 onion(s), red (small), minced
•1/2 pepper(s), green, bell, small, minced
•1/2 cup(s) corn, frozen, thawed
•2 clove(s) garlic, minced
•1/2 teaspoon chili powder
•1/4 teaspoon cumin, ground
•1 pinch salt
•pepper, black ground
•5 tablespoon salsa
Directions
Preheat the oven to 350° F. Coat a 1-quart loaf pan with cooking spray or line with aluminum foil.
In a large bowl, combine the turkey, oatmeal, milk, egg whites, onion, green pepper, corn, garlic, chili powder, and cumin. Season with salt and pepper. Press the turkey mixture into the prepared pan and cover with aluminum foil.
Bake 40 – 45 minutes. Remove foil and cover with the salsa. Bake, uncovered, 5 – 10 minutes longer, until the center is no longer pink. Serve immediately with additional salsa on the side.
