Introduction

Number of Servings: 4

Ingredients

    1 pkg Turkey Sausage, sliced
    1 onion, chopped
    1 clove garlic, minced
    2 plum tomatoes, chopped
    *2 zucchini, peeled and sliced or chopped
    *2 yellow squash, peeled and sliced or chopped

    * bell peppers, any color, can be used instead of the zucchini and squash. Can also put on shish kabob sticks, if using bell peppers, and bake or broil.

Directions

For quick prep: Put it all in the pot at the same time and cook with a lid on, over medium heat, for 30 minutes.

Or if you like to play with your food, like I do: You could brown the sausage and then move it to a plate and keep it warm. Then saute the onion and garlic in the juices from the sausage. Add tomatoes, then zucchini and squash. Cook with a lid on for 20-30 minutes and then add the sausage back in and heat through before serving.

Makes 4 servings.
