1 can (29 oz) sweet potatoes, drained
1 small banana, mashed
2 T. Sucanat
1 egg or egg replacer
1/4 c. cottage cheese
1/4 c. almond milk
Pumpkin pie seasoning
2 T. ground flax seeds
1/4 c. pecans
1 T. Sucanat
In a large mixing bowl, combine sweet potatoes and banana. Use a potato masher to smash. Add egg or egg replacer, cottage cheese and almond milk. Use a hand mixer to beat on the highest speed until completely combined. Add seasonings (amount according to preference) and flax seeds. Beat on low for 15 seconds or so until combined.
Pour pie mixture into pie pan. Top with pecans, additional Sucanat and cinnamon. Bake at 300 degrees for 50 minutes or until set. Pie is finished when it no longer jiggles if shaken.
Makes 8 slices.
