Decadent Stuffed Tilapia

Ingredients

8 tilapia fillets (approx. 2 oz. each)
4 oz neufchatel cheese
1 cup imitation crab meat
4 oz cooked shrimp
1 cup sliced mushrooms
dash of garlic powder
Directions
Saute' mushrooms.
Soften cheese.
Pat dry fillets.
Spread 1/4 cheese on one side of 4 fillets.
Evenly distribute mushrooms, crab, and shrimp over cheese. Top with remaining fillet.
Bake at 400 degrees for 30 minutes.
Serve with rice or pasta.

This was so good.... It will be something that I make again and I think I'll try mixing the topping ingredients together with the cheese and putting it on top. I made it without the crab as I didn't like the quality of what I got once it was opened, that will make it even better I'll bet though. - 5/11/09

I played with a few different variations-- add spinach, try mahi, no crab. My favorite was sundried tomatoes, shrooms, shrimp & crm cheese on top of the filet. I prefer fat free cream cheese, not Neufchatel. Why add more calories?
I recommend using filling as a topping. Don't make the sandwich - 10/22/07

Absolutely delicious, and she's right- I DON'T believe how healthy it is!! My only problem is that apparently my Tilapia fillets were much larger than hers. An aduilt could only eat half of one. The kids, a 1/4. NO problem though, the next day I cut it up and served it reheated over egg noodles. - 8/28/07

Awesome! I drizzled my fillets liberally with lemon juice (top & bottom) and added a tiny bit of kosher salt and course ground pepper before baking. The garlic powder was ever so slightly sprinkled on the middle ingredients. I also sprayed the top fillet just a little with olive oil baking spray. - 12/29/10
