Pressure cooker mushroom soup

Ingredients

    Cooking with a pressure cooker is such a healthy way to prepare quick and delicious meals!

    6 cups chopped fresh mushrooms
    1 1/2 cups chopped onion
    1 tsp garlic powder
    3 cups water
    1/4 cup half & half
    6 tbsp bisquick
    3/4 tsp salt
    1 tsp dried thyme
    3/4 cup reduced fat sour cream
    2 tsp dried parsley flakes
    1/4 tsp fresh black pepper

Directions

Saute mushrooms and onions in pressure cooker for 5 minutes. I use pan spray to save calories. In a large bowl, combine the water, half and half, garlic powder and baking mix. Add teh water mixture, salt and thyme to the mushrooms. Lock the lid. Bring the cooker to 15 psi pressure using high heat. At high pressure, lower the heat to maintain pressure. Set the time. Cook for 3 minutes. Once the time is up, remove the pressure cooker from the heat and use a natural release. When the pressure drops, remove the lid, stir in the sour cream, parsley flakes, and pepper. Adjust seasonings to taste.
