Ingredients

2 large ribs celery, sliced
½ large onion, sliced
1 large can chicken breast (12.5 oz), drained and flaked
1 carton Swanson low sodium chicken broth
1 can black beans, drained and rinsed
1 can corn, drained
1 can Italian flavor diced tomatoes
1 can green chiles
1 can Ro*tel (drain for milder soup)
3 oz light cream cheese, softened
3/4 cup red enchilada sauce (mild)
½ tsp cumin
Pinch red pepper
1 tsp chili powder
fresh cilantro (optional)

Directions
Serves 8
In a large pot, saute celery and onion in a tsp of olive oil until crisp tender. Add next 8 ingredients and bring to a boil, reduce heat and simmer. Add remaining ingredients to taste.
Serving suggestions: garnish with fresh cilantro, shredded cheese and/or tortilla chips

This was great! Don't leave out the cream cheese, that would make it taco soup. It makes it creamy w/out adding many calories. This is a wonderful recipe, everyone who had some loved it. In the future I'll change the beans, probably to red kidney beans, just because I don't like black beans. - 2/26/12

WONDERFUL recipe!!!! I used regular black pepper since I didn't have red. I put a bit more pepper and chili powder than it calls for. You can control how spicy you like it by choosing different rotels and enchilada sauce. Try it - you won't regret it! I used tyson frozen chicken breast chunks. - 3/22/10

I made a double batch - brought to work for the Cinco de Mayo party. It is SPICY but I work with 90+ guys. It will be gone before lunch ever arrives. Smelled DELICIOUS. Went home and had some for dinner - I am a whimp so I used cheese to cool the spices but my husband loved it. Will be making t - 5/5/08
