Blueberry Oatmeal Pecan Pancakes

Introduction

Needed a pancake recipe because I can't give them up even with diabetes. Added some fiber and protein and the superfood, blueberries, and they are yummy. You can add water until you get the consistency you like. I like medium thick pancakes. Needed a pancake recipe because I can't give them up even with diabetes. Number of Servings: 4

Ingredients

    1/2 cup of Your favorite pancake mix
    1/4 cup old-fashioned oatmeal, finely ground
    1/4 cup pecans, finely ground
    1/2 cup fresh blueberries
    1 egg white
    1 tsp vanilla
    1/2 tsp cinnamon
    water to desired consistency

Directions

Mix the dry ingredients, add the wet ingredients, including the blueberries last. Cook over medium high heat until golden brown. Top with low-sugar maple syrup that you've warmed in a pot of water. Then enjoy! I like mine with a cup of cold skim milk!

Serving Size: About 12 3-4" pancakes.
