Chicken 'n Salsa

Introduction

Ingredients

    15 oz. chicken breast (about 9 tenders), cubed
    1 c. salsa
    1 1/2 c. black beans
    1 12oz can diced tomatoes
    1 onion, chopped
    2 garlic cloves
    1 12oz can corn

Directions

Combine all ingredients in a 6 quart crock pot. Cook on low for 6 to 8 hours or until chicken is cooked through.

If desired, garnish with sour cream and cheese just before serving.

Serve over brown rice or whole wheat pasta (not included in the nutritional information).

Serving Size: Makes 6 servings, about 1 1/2 cup each
