Onion Soup

Introduction

Number of Servings: 1

Ingredients

    5 Medium yellow onions, sliced
    1 pat of butter
    1/2 cup Red Wine
    6 cups beef broth
    1/4 tsp dried thyme
    1/4 tsp fresh ground black pepper

    Optional: 1 cup shredded provolone cheese
    Optional: whole grain baugette

Directions

Melt butter in dutch oven, add sliced onions. Saute on med low heat until onions are translucent, about 5 minutes. Increase heat to med and saute until onions are a deep golden yellow, about 20-30 minutes. (Deglaze if needed with small amounts of beef broth as you go along.) Add beef broth and wine. Bring to a boil, simmer for about 30 minutes.

Optional, ladle into a single serve oven proof bowl, add a toasted sliced whole grain baugette and top with 1/4 cup provolone cheese, broil until cheese is melted.
