Southwestern Quinoa Salad

Number of Servings: 8

Ingredients

    3/4 cup dry quinoa
    1 15.5 oz can black beans, rinsed and drained
    1 1/2 cup frozen corn, thawed
    1 pint grape tomatos, halved
    Half of one vidalia (sweet) onion, chopped
    Juice of one lime
    Juice of one lemon
    3 TB extra virgin olive oil
    Cilantro, salt & pepper to taste

Directions

1. Begin by preparing quinoa according to package directions (should take 10 to 15 minutes).

2. While the quinoa is cooking, prep your beans, corn, tomatos, and onion. Add quinoa and toss together with citrus juice, olive oil, and seasonings.

3. Enjoy!

Serving Size: Makes approximately 8 1-cup servings
