Kristen's Vegetarian Chili

Ingredients

    1 cup black beans, dry
    1-15 oz. can no salt added diced tomatoes
    3/4 c. sliced onions
    1 Tbsp. chopped garlic
    4 medium carrots, chopped
    1 Tbsp. olive oil
    1 Tbsp. chili powder
    2 tsp. ground cumin
    1 tsp. crushed red pepper
    Salt and pepper to taste to taste

    Adjust seasonings to your liking!

Directions

Prep dry beans according to package instructions. I boil mine and let them soak all day.

Heat olive oil in a frying pan on low. Saute garlic, onions and carrots for 5-10 minutes. Add tomatoes, black beans, and all spices. Add some water or a splash of vegetable broth and let simmer for 30-40 minutes on low heat.

You could also throw everything in a slow cooker, although I would still saute onions, garlic and carrots beforehand.

Serving Size: makes about 8 one cup servings
