FLORENTINE STUFFED MUSHROOMS

Ingredients

    10 LARGE MUSHROOM CAPS
    10 OZ PKG FROZEN SPINACH, DEFROSTED AND WATER REMOVED
    2 CRUSHED CLOVES GARLIC
    1/2 CHOPPED ONION
    2 OZ SHREDDED REDUCED FAT CHEDDAR CHEESE
    2 OZ REDUCED FAT CREAM CHEESE
    4 TABLESPOONS PECORINO ROMANO
    1/2 TSP DRY MUSTARD
    SALT AND PEPPER TO TASTE
    1 CUP CHICKEN OR VEG. BROTH

Directions

REMOVE STEMS FROM THE MUSHROOMS AND PLACE IN A FOOD PROCESSOR AND CHOP. ADD ALL THE OTHER INGREDIENTS, EXCEPT THE BROTH. START PUREEING THE INGREDIENTS AND KEEP ADDING BROTH TILL YOU GET A CONSISTENCY WHEREBY THE INGREDIENTS HOLD TOGETHER.
PLACE MUSHROOMS IN A PAN SPRAYED WITH PAM. SPRAY THE MUSHROOMS WITH PAM AND SALT THEM. PLACE SPINACH MIXTURE ON CAPS EQUALLY. ADD THE REMAINDER OF THE BROTH TO THE PAN AND BAKE AT 350 FOR ABOUT 45 MINUTES.
